  • 1 small box dates
  • 1 tsp. soda
  • 1 c. boiling water
  • 2 eggs
  • 1/4 c. cooking oil
  • 2 tsp. artificial sweetener
  • 1 tsp. vanilla
  • 2 c. flour
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1/2 c. nuts

Directions

  1. 1
    Cut dates into small pieces. Place in bowl. Sprinkle soda over dates. Pour boiling water over dates and let stand until cool. Beat together eggs, oil, sweetener and vanilla. Add flour, salt and baking powder. Add cooled date mixture and nuts. Mix well. Bake at 350° for 60 minutes.
