- 2 tablespoons unsalted butter
- 3 small shallots, sliced
- Kosher salt and freshly ground black pepper
- One 14-ounce bag frozen peas, thawed
- 2 tablespoons freshly squeezed lemon juice
- 1/4 cup grated Parmesan
Directions

1Melt the butter in a medium skillet over medium heat.

2Add the shallots and a pinch of salt and cook until the shallots are soft and translucent, about 4 minutes.

3Stir in the peas and 1/2 teaspoon salt and cook until the peas are soft but still bright green, 2 to 3 minutes.

4Add the lemon juice and toss.

5Remove from the heat and stir in the Parmesan and a generous pinch of black pepper.

6Serve hot.
