- 1 12 cups rice
- 12 cup onion, chopped
- 12 cup butter
- 3 cups hot chicken broth
- 1 cup white wine
- 3 tomatoes, chopped
- 1 12 teaspoons salt
- 18 teaspoon pepper
- 34 cup parmesan cheese, grated
- 1 cup ripe olives, cut unto wedges
Directions

1Cook the rice and onion slowly in the butter, stirring until lightly browned.

2Add 3 cups hot broth.

3Cover, cook slowly for 10 minutes.

4Add the wine, tomatoes, salt and pepper.

5Cook 12 minutes.

6Stir in the cheese and olives.

7Heat thoroughly.
