- 2 pkg. frozen chopped spinach
- 2 large onions, chopped
- 3/4 c. butter or margarine
- 2 c. cornbread stuffing mix
- 5 eggs, beaten
- 1/2 c. Parmesan cheese
- 1 Tbsp. garlic powder
Directions

1Cook spinach as directed and drain.

2Saute onions in butter until transparent.

3Add stuffing mix to sauteed onions.

4Mix eggs, spinach and garlic powder and add to stuffing-butter mixture.

5Roll into walnut-size balls and freeze on cookie sheet.

6Keep frozen in plastic bag until ready to bake.

7Preheat oven to 400°.

8Bake 15 to 20 minutes.

9Watch carefully; balls should be firm (not mushy).
