Parmesan Zucchini

  • 2 zucchini
  • water
  • 1/4 c. grated Parmesan cheese
  • 2 Tbsp. chopped fresh parsley

Directions

    Slice zucchini into very thin slices.

    Simmer zucchini slices in 1/2 inch water in a nonstick skillet.

    Drain.

    Spread mixture onto nonstick baking sheet (or use Pam); sprinkle with Parmesan cheese and parsley.

    Bake in a 350° oven for 20 minutes.
