Parsley Mashed Potatoes

- 5 lb. potatoes
- 1/2 c. butter or margarine
- 1 1/2 c. milk
- 1 1/2 tsp. salt
- 1/4 c. Parsley
Directions

1Cut potatoes into 1-inch pieces.

2Simmer in large pot of salted water 15 to 20 minutes, until potatoes are tender.

3Drain.

4While potatoes are draining, melt butter; add milk and salt and cook until hot.

5Return potatoes to pot and mash, adding milk and butter.

6Transfer to large shallow microwavable baking dish.

7Cool; cover and refrigerate up to 2 days.

8To serve, heat potatoes in microwave on high 20 minutes, stirring every 5 minutes, adding a little hot milk if potatoes seem dry.

9Chop parsley and stir into potatoes before serving.
