- 1 to 2 lb. small potatoes
- 1/4 c. water
- 1 Tbsp. minced parsley
- 2 Tbsp. butter
- dash of salt and pepper
Directions

1Cut a 1/2-inch strip of peel from around the middle of each potato.

2Place potatoes in 2-quart casserole dish.

3Add water. Cover with lid and cook at 350° for 15 to 20 minutes or until tender.

4Drain potatoes and stir in parsley, butter, salt and pepper.

5Makes 4 servings.
