Parsley Potatoes

  • 1 to 2 lb. small potatoes
  • 1/4 c. water
  • 1 Tbsp. minced parsley
  • 2 Tbsp. butter
  • dash of salt and pepper

Directions

    Cut a 1/2-inch strip of peel from around the middle of each potato.

    Place potatoes in 2-quart casserole dish.

    Add water. Cover with lid and cook at 350° for 15 to 20 minutes or until tender.

    Drain potatoes and stir in parsley, butter, salt and pepper.

    Makes 4 servings.
