- 2 lb. potatoes
- 1/2 c. butter
- 1/4 c. minced parsley
- salt and pepper to taste
Directions

1Peel and cut potatoes into 2-inch pieces.

2Put into saucepan and cover with water.

3Cook until tender and then drain off the water.

4Combine melted butter and parsley.

5Pour over the potatoes and toss until well coated.

6Season with salt and pepper.

7Makes 6 to 8 servings.
