- 5 medium parsnips
- 2 Tbsp. flour
- 1/2 tsp. salt
- dash of pepper
- 2 Tbsp. margarine or butter, softened
- 1 Tbsp. chopped onion
- 1 egg, beaten
- dry bread crumbs
- 1/4 c. shortening
Directions

1Pare parsnips and cut in halves.

2Boil parsnips in water, about 30 minutes or until tender; drain.

3Mash parsnips.

4Mix parsnips, flour, salt, pepper, margarine, onion and egg.

5Shape into 8 patties.

6If mixture is too soft to shape, mix in some of the bread crumbs until stiff enough.

7Coat patties with bread crumbs.

8Heat shortening in skillet over medium heat until hot.

9Cook patties about 5 minutes, turning until golden brown.
