  • 5 medium parsnips
  • 2 Tbsp. flour
  • 1/2 tsp. salt
  • dash of pepper
  • 2 Tbsp. margarine or butter, softened
  • 1 Tbsp. chopped onion
  • 1 egg, beaten
  • dry bread crumbs
  • 1/4 c. shortening

Directions

    Pare parsnips and cut in halves.

    Boil parsnips in water, about 30 minutes or until tender; drain.

    Mash parsnips.

    Mix parsnips, flour, salt, pepper, margarine, onion and egg.

    Shape into 8 patties.

    If mixture is too soft to shape, mix in some of the bread crumbs until stiff enough.

    Coat patties with bread crumbs.

    Heat shortening in skillet over medium heat until hot.

    Cook patties about 5 minutes, turning until golden brown.
