- 5 c. parsnip, peeled and thinly sliced
- 1 c. leeks, sliced
- 3 Tbsp. olive oil
- 1 1/2 c. extra good Parmesan cheese, grated
- 1/2 c. onions, minced
- 3 to 4 cloves garlic
- 1 prepared vegetable shortening pie crust
Directions

1Saute parsnips, leeks, onions and garlic in olive oil over medium heat; do not allow this mixture to brown.

2You can mix a little butter with your olive oil if you like.

3Layer mixture alternately with Parmesan cheese into crust.

4Some times we mix in some sauteed spinach as well.

5Season to taste.

6Bake at 350° for 45 minutes.

7Top with sliced tomatoes.

8Serves 6 to 8.
