1Peel and halve parsnips.

2Boil for about 5 minutes and drain. Allow to cool for a few minutes so not too hot to handle.

3Combine equal portions of flour and grated Parmesan cheese.

4Roll cooled parsnips in flour and cheese mixture.

5Coat bottom of baking pan with a small amount of oil.

6Place parsnips in pan and bake at 350° for 1 hour.
