Passover Chocolate Chip Mandel Bread

  • 2 cups Sugar
  • 2 sticks Unsalted Butter, At Room Temperature
  • 6 whole Eggs
  • 2-3/4 cups Matzo Cake Meal (See Note)
  • 1 teaspoon Salt
  • 3/4 cups Potato Starch
  • 1 cup Semi-Sweet Chocolate Chips
  • 1 cup Sliced Almonds, Or Your Favorite Nuts
  • FOR THE TOPPING:
  • 1 teaspoon Cinnamon
  • 2 teaspoons Sugar

    Note: Matzo cake meal is typically available in the ethnic or Passover food aisle of well-stocked supermarkets.

    Preheat oven to 350°F.

    Using either a stand or hand mixer, cream sugar and butter together in a large bowl. Beat in eggs, one at a time.

    In a separate bowl, sift together cake meal, salt and potato starch. Fold into egg mixture. Stir in chocolate chips and nuts.

    Divide dough in half and form 2 loaves, approximately 2 to 3 inches high on a baking sheet lined with parchment paper. Loaves will neither rise nor spread in oven but I did find them very sticky to work with, so I used a bit of extra cake meal on my hands to pat them into shape.

    For the topping, combine cinnamon and sugar in a small bowl. Sprinkle evenly over loaves. Bake for 45 minutes. Allow to cool slightly but slice, with a serrated knife, while still warm.
