Ingredients

  • 4 c. zucchini, thinly sliced
  • 1 c. chopped onion
  • 1/2 c. oleo
  • 1/2 c. parsley or 2 Tbsp. parsley flakes
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. garlic powder
  • 1/4 tsp. oregano
  • 2 eggs, beaten
  • 8 oz. (2 c.) Mozzarella cheese, grated
  • 8 oz. tube crescent rolls
  • 2 tsp. mustard

Directions

    Cook and stir zucchini and onion in oleo for 10 minutes, then add parsley, salt, pepper, garlic powder and oregano.

    Combine 2 beaten eggs and Mozzarella cheese and stir into zucchini mixture. Separate crescent dinner rolls and make into a crust in a 10-inch pie pan.

    Spread crust with mustard.

    Pour zucchini mixture into crust and bake 18 to 20 minutes in 375° oven or until center is set.
