- 1 c. uncooked spiral or elbow pasta
- 1 medium zucchini, cut into 1/4-inch slices
- 1 medium tomato, coarsely chopped
- 1 medium onion, chopped
- 1 small green pepper, chopped
- 1 clove garlic, finely chopped
- 2 Tbsp. oil
- 1/2 tsp. salt
- 1/4 tsp. dried basil
- 1/8 tsp. pepper
Directions

1Cook pasta as directed on package; drain.

2Cook and stir zucchini, tomato, onion, pepper and garlic in oil in 10-inch skillet over medium heat for 3 minutes.

3Stir in pasta and the remaining ingredients.

4Cook about 3 minutes, stirring occasionally, until zucchini is crisp-tender.

5Serve with grated Parmesan cheese, if desired.

6Any other combination of vegetables may be added.
