Ingredients
- 3 Tbsp. olive oil
- 1 1/2 c. broccoli, cut in small florets and stem peeled and diced
- 1 tsp. minced garlic
- 1/4 tsp. pepper
- 4 oz. crumbled Feta cheese
- 1 large onion, chopped
- 1/2 c. water
- 2 large tomatoes, quartered, seeded and chopped
- 8 oz. medium pasta shells, cooked and drained (reserve 1/2 c. pasta water)
Directions

1Heat oil in skillet on high.

2Add onion and broccoli and stir-fry for 2 minutes.

3Add regular water; reduce heat, cover and simmer for 5 minutes, stirring once.

4Stir in tomatoes, garlic and pepper.

5Cover and simmer for 3 minutes longer or until broccoli is tender.

6Put pasta in bowl.

7Add broccoli, cheese and reserved water.

8Stir until blended and creamy.
