Pasta Broccoli Toss

Ingredients

  • 4 c. rotini pasta
  • 3 c. broccoli florets
  • 2 Tbsp. oil
  • 1 sweet yellow pepper chopped
  • 1 onion chopped
  • 4 garlic cloves minced
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. white sugar
  • 1/2 c. basil shredded
  • 4 tomatoes chopped
  • 1/4 c. romano cheese grated

Directions

    In large sauce pan, cook rotini as directed in boiling salt water for 6 minutes.

    Add broccoli, cook 2 to 3 minutes.

    Drain. Reserve 1/4 c. of the liquid.

    Return pasta to pan.

    Meanwhile heat oil in saucepan; add pepper, onion and garlic, cook about 5 minutes.

    Stir in reserved liquid, salt, pepper and sugar; bring to a boil. Pour mixture over pasta and broccoli mixture; add tomatoes, basil and cheese.

    Toss and serve.
