  • 2 cups whole wheat penne
  • 14 ounces fresh mozzarella cheese, cut into 1/2 inch cubes
  • 5 tomatoes, cored and roughly chopped
  • 1/2 cup olive oil
  • 1 tablespoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/3 cup fresh basil

Directions

    Mix the mozzarella, olive oil, chopped tomatoes, pepper and salt.

    Cook pasta according to directions.

    Mix sauce and pasta. Add fresh basil. Serve.
