- 2 tablespoons olive oil
- 12 ounces pancetta, cut into 1/2 ", pieces
- 4 large egg yolks
- 23 cup heavy whipping cream
- salt and pepper
- 1 cup grated parmesan cheese
- 1 lb dry penne pasta
Directions

1Heat olive oil in large skillet over medium low heat.

2Saute pancetta until crisp, about 15 minutes.

3Drain on paper towels.

4Meanwhile, set large pot of water to boil, throw in salt when it boils.

5Beat yolks and cream together and season with salt and pepper.

6Whisk in 1/2 of cheese.

7Cook penne, drain in colander, return to pot.

8Add pancetta and egg mixture and toss to combine well.

9Stir in remaining cheese and serve.
