Pasta Fruit Salad

Ingredients

  • 1 1/4 c. orgo pasta (rice shaped pasta available at Jewel)
  • 1 (20 oz.) can pineapple chunks
  • 1 (11 oz.) can mandarin oranges
  • 2 eggs
  • 1/2 c. sugar
  • 1 Tbsp. flour
  • 8 oz. Cool Whip, thawed
  • 2 c. fresh fruit

Directions

    Cook, drain and rinse pasta following package directions. Drain fruit juices into a glass bowl.

    Beat in eggs, sugar and flour.

    Cook in microwave on High for 5 to 6 minutes, until mixture boils and thickens, stirring several times.

    Cool 10 minutes.

    Mix everything but Cool Whip and fresh fruit. Refrigerate overnight.

    Add Cool Whip and fresh fruit just before serving.
