Ingredients

  • 2 c. uncooked corkscrew macaroni (rotini) or elbow macaroni
  • 3 beaten eggs or equivalent egg substitute
  • 1/2 c. milk
  • 1/2 c. plus Cheddar, shredded
  • 1/4 c. chopped onion
  • 1 lb. lean ground beef
  • 1 (15 oz.) can tomato or pizza sauce
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 1/2 tsp. garlic
  • 1 chopped green pepper (optional)
  • 1 1/2 c. shredded low-fat Mozzarella cheese

Directions

    Cook macaroni according to package directions; drain.

    Mix in eggs, milk and Cheddar cheese.

    Spread macaroni mixture in bottom of buttered pizza pan.

    Brown beef with onion; drain.

    Add sauce and spices.

    Spread over macaroni base.

    Top with Mozzarella cheese and green pepper.

    Bake at 350° for 20 minutes.
