- 8 c. cooked rotini pasta
- 1/2 lb. raw spinach, chopped
- 1/4 c. olive oil
- 1/4 c. Parmesan cheese
- 1/2 tsp. black pepper
Directions

1Toss all the ingredients in a big bowl, then add your favorite vegetables (i.e. tomatoes, mushrooms, onions, red, green or yellow peppers).

2You may also add sliced grilled chicken breast, chopped black olives and Feta cheese.

3Serve with your choice of dressing.
