Ingredients
- 3 large ripe tomatoes (2 1/2 lb.)
- 4 cloves garlic
- 1/2 tsp. red pepper flakes
- 1/2 c. fresh basil
- salt and pepper
- 1/2 c. olive oil
- 1 lb. pasta
- 1/4 lb. white cheese (Muenster or Fontina)
- 1/2 c. Parmesan
Directions

1Chop tomatoes (approximately 6 cups) in large bowl.

2Add seasonings and oil.

3Let stand several hours or overnight; return to room temperature.

4Cook pasta.

5Add 1/4 cup oil from tomatoes and Parmesan to hot pasta and toss.

6Add 1/2 tomatoes; toss. Grate white cheese; add to pasta with rest of tomatoes.

7Toss and serve.
