Pasta Salad *

Ingredients

  • 3 large ripe tomatoes (2 1/2 lb.)
  • 4 cloves garlic
  • 1/2 tsp. red pepper flakes
  • 1/2 c. fresh basil
  • salt and pepper
  • 1/2 c. olive oil
  • 1 lb. pasta
  • 1/4 lb. white cheese (Muenster or Fontina)
  • 1/2 c. Parmesan

Directions

    Chop tomatoes (approximately 6 cups) in large bowl.

    Add seasonings and oil.

    Let stand several hours or overnight; return to room temperature.

    Cook pasta.

    Add 1/4 cup oil from tomatoes and Parmesan to hot pasta and toss.

    Add 1/2 tomatoes; toss. Grate white cheese; add to pasta with rest of tomatoes.

    Toss and serve.
