- 1 (12 oz.) pkg. rotini
- 2 c. each carrots, broccoli, cauliflower, zucchini, mushrooms and cherry tomatoes
- 1 can sliced black olives
- 2 (16 oz.) bottles low calorie Italian dressing
Directions

1Chop all vegetables except tomatoes and mushrooms and put in a microwavable bowl.

2Add 1 bottle of Italian dressing.

3Microwave on High 4 to 6 minutes until vegetables are tender-crisp.

4Boil pasta 8 to 10 minutes.

5Drain and rinse with cold water.

6Stir into vegetables.

7Add tomatoes, mushrooms and olives.

8Refrigerate until chilled.

9Salad can be eaten immediately, but it tastes even better the second day.

10This low calorie salad makes a cool summer meal! Serves 16.
