- 1 (1 lb.) box cooked penne
- 1/3 c. plus 2 Tbsp. olive oil
- 2 medium tomatoes, diced
- 6 oz. fresh Mozzarella cheese, cut in cubes
- 1 can white cannellini beans, drained
- 3 Tbsp. red wine vinegar
- 6 basil leaves, torn in small pieces
- 1/2 Tbsp. chopped parsley
- salt and pepper to taste
Directions

1Toss cooked, drained penne in 2 tablespoons olive oil. Combine remaining olive oil, tomatoes, cheese, beans, vinegar, basil, parsley and season.

2Add to pasta and toss.

3Add a little extra oil and vinegar, if necessary.
