Ingredients

  • 1 (1 lb.) box cooked penne
  • 1/3 c. plus 2 Tbsp. olive oil
  • 2 medium tomatoes, diced
  • 6 oz. fresh Mozzarella cheese, cut in cubes
  • 1 can white cannellini beans, drained
  • 3 Tbsp. red wine vinegar
  • 6 basil leaves, torn in small pieces
  • 1/2 Tbsp. chopped parsley
  • salt and pepper to taste

Directions

    Toss cooked, drained penne in 2 tablespoons olive oil. Combine remaining olive oil, tomatoes, cheese, beans, vinegar, basil, parsley and season.

    Add to pasta and toss.

    Add a little extra oil and vinegar, if necessary.
