- 1 cup pasta cooked al dente
- 2 sausages chopped
- 2 chiles pickled jalapeno, diced
- 1/3 cup panela cheese cubed, may substitute mozzarella
- 1/3 cup jack cheese Monterrey
- 6 olives minced
- 1 tablespoon light mayonnaise
- 1 teaspoon dijon mustard
- 1 teaspoon brine from the pickled jalapenos
- salt and ground black pepper
Directions

1Mix the mayonnaise with the mustard and vinegar.

2Season with salt and pepper.

3Add the pasta, sausage, jalapeno, panela and monterrey jack cheeses, and olives.

4Mix well and refrigerate.
