- 1 cup rotini or other similarly shaped pasta
- 3/4 cup broccoli florets
- 1 zucchini small, diced
- 1 stalk celery chopped
- 2 tablespoons parsley minced
- 2 tablespoons olive oil
- 1 tablespoon light sour cream
- 1 lemon
- salt and ground black pepper
Directions

1Cover the broccoli and zucchini with water and cook for 2 minutes. Drain, rinse with cold water, and pat dry with a paper towel.

2Prepare the pasta al dente, following the directions on the package. Drain, rinse with cold water, and set aside.

3Whisk the olive oil, cream, lemon juice, and rind together in a small bowl. Taste for seasoning and add salt and pepper if needed.

4Mix the pasta, vegetables, parsley, and dressing together in a salad bowl.
