- 4 boneless, skinless chicken breasts
- 1 c. onions, diced
- 1 c. green peppers, diced
- 1 c. mushrooms, diced
- 1 c. tomatoes, diced
- 1 large avocado, diced
- 2 eggs
- 1/2 tsp. pepper
- 1/2 tsp. garlic
Directions

1Beat eggs; add garlic, pepper and diced onions.

2Dip chicken breasts in mixture.

3Fry chicken until brown, then bake at 350° for 30 minutes.

4Add vegetables to chicken and bake an additional 15 minutes.

5Take chicken out of the oven and sprinkle the avocado over it before serving.
