Pavlova (Meringue)

  • 3 egg whites
  • 2 c. sugar
  • 1 tsp. vanilla
  • 1 tsp. white vinegar
  • 3 Tbsp. boiling water
  • whipped cream
  • sliced fresh fruit such as kiwi, strawberries, bananas, peaches, etc.

Directions

    Combine first 4 ingredients.

    Beat on high for 2 minutes.

    Add boiling water and beat on high for 7 minutes.

    Mixture will be stiff and form a peak.

    Put foil on baking sheet or bottom side of a round tin (9-inch size).

    Put oil on foil and spread to edge. Spread meringue mixture from center to edge.

    Bake in slow oven, 300°, for 1 hour exactly.

    When cool, peel foil from bottom and place on dish.

    Cover with whipped cream.

    Add sliced fruit.
