  • 2 tbsp lemon juice
  • 2 tsp honey
  • 1/4 cup vegetable oil
  • 2 tbsp fresh chopped mint
  • 1 lb fresh peas, blanched
  • 1/2 cup thinly sliced radishes, plus 2 whole radishes for garnish
  • 1/2 cup crumbled feta cheese
  • 1 tbsp fresh chopped dill
  • 3 cups fresh pea shoots

Directions

    In a large bowl, whisk together lemon juice, honey, oil and mint. Season. Add peas, sliced radishes, feta and dill and toss to combine. Arrange pea shoots on a serving platter and spoon pea salad over top. Garnish with radishes.
