- 2 tbsp lemon juice
- 2 tsp honey
- 1/4 cup vegetable oil
- 2 tbsp fresh chopped mint
- 1 lb fresh peas, blanched
- 1/2 cup thinly sliced radishes, plus 2 whole radishes for garnish
- 1/2 cup crumbled feta cheese
- 1 tbsp fresh chopped dill
- 3 cups fresh pea shoots
Directions

1In a large bowl, whisk together lemon juice, honey, oil and mint. Season. Add peas, sliced radishes, feta and dill and toss to combine. Arrange pea shoots on a serving platter and spoon pea salad over top. Garnish with radishes.
