Pea Salad

Ingredients

  • 5 c. frozen peas (two 16 oz. bags)
  • 1 (8 oz.) sliced water chestnuts, drained
  • 1 c. Chinese pea pods, stems and strings removed
  • 1/2 c. chopped red onion (1 small or 1/2 medium)
  • 1/4 c. mayonnaise
  • 1/4 c. sour cream
  • 1/8 tsp. white pepper
  • 1/2 lb. cooked bacon, crumbled
  • 1/8 tsp. salt
  • Chinese pea pods and tomato wedges for garnish

Directions

    Toss together peas, water chestnuts, 1 cup Chinese pea pods and red onion.

    Set aside.

    Combine mayonnaise, sour cream, pepper and salt.

    Gently combine this with vegetables.

    Chill.

    Before serving, fold in crumbled bacon.
