- 2 c. cubed, peeled potatoes
- 2 (9 oz.) pkg. frozen peas and pearl onions
- 2 (14 oz.) cans low-sodium chicken broth
- 1/2 c. reduced-fat sour cream
- 1/2 c. light Italian dressing
- 2 Tbsp. chopped fresh mint
Directions

1In a large saucepan, combine the cubed potatoes, peas and onions and Italian dressing.

2Bring to a boil; reduce heat to medium-low and simmer 15 minutes until vegetables are tender.

3Stir in sour cream; blend well.

4Serve warm, garnished with fresh mint.
