  • 2 c. cubed, peeled potatoes
  • 2 (9 oz.) pkg. frozen peas and pearl onions
  • 2 (14 oz.) cans low-sodium chicken broth
  • 1/2 c. reduced-fat sour cream
  • 1/2 c. light Italian dressing
  • 2 Tbsp. chopped fresh mint

Directions

    In a large saucepan, combine the cubed potatoes, peas and onions and Italian dressing.

    Bring to a boil; reduce heat to medium-low and simmer 15 minutes until vegetables are tender.

    Stir in sour cream; blend well.

    Serve warm, garnished with fresh mint.
