Pea Soup With Crispy Prosciutto

- 2 tablespoons butter
- 1 leek chopped
- 2 potatoes chopped
- 5 cups chicken stock
- 14 ounces frozen peas
- 6 slices prosciutto
- crusty bread to serve
Directions

1Preheat broiler to high. Melt butter in a saucepan on medium. Cook leek 5 mins, stirring, until soft. Add potatoes and cook 2 mins. Add stock and bring to a boil. Reduce heat and simmer 10 mins. Add peas and simmer 10 mins, until vegetables are tender. Puree with an immersion blender until smooth.

2Place prosciutto on a baking sheet and broil 2-3 mins on each side, until crisp. Season soup and serve with prosciutto and bread.
