- 2 c. flour
- 1 c. sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 2 Tbsp. butter, melted and cooled
- 1 c. milk
- 1 egg
- 1 1/2 tsp. vanilla extract
Directions

1Preheat oven to 400°.

2Grease muffin tins well.

3Sift four with sugar, baking powder and salt into a large bowl.

4Add melted butter to milk and egg.

5Beat to mix well.

6Add vanilla.
-
7Make a well in the center of flour mixture.

8Pour milk mixture in all at once.

9Stir with a fork, only until all ingredients are moistened. Do not beat or overmix.

10Quickly spoon batter into muffin tins, filling each slightly more than half full.

11Bake 15 minutes if using Gem muffin pans; 18 to 20 minutes for full size muffin pans. Remove from tins immediately.

12Serve hot.
