- 3 c. (about 1 1/2 lb.) peaches
- 6 Tbsp. sugar
- 2 c. all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- pinch of salt
- 1 tsp. cinnamon
- 1 1/2 c. sugar
- 1/2 c. shortening
- 2 eggs
- 1 c. chopped pecans or walnuts
- 1 tsp. vanilla
Directions

1Plunge peaches into boiling water to blanch for 45 seconds. Remove and run under cold water.

2Skins will slip off easily. Slice into sections.

3Place the peaches and 6 tablespoons sugar in blender.

4Blend or process until pureed.

5Combine flour with all dry ingredients, except remaining sugar.

6Cream sugar and shortening.

7Add eggs, one at a time, mixing well.

8Add peach puree, nuts and vanilla, stir well.

9Add dry ingredients, mix well. Spoon batter into 2 well-greased and floured loaf pans (9 x 5 x 3-inch).

10Bake at 325° for 1 hour or until toothpick comes out clean.
