Peach Bread

  • 1 1/2 lb. ripe peaches
  • 2 c. flour
  • 1/2 c. white sugar
  • 1/2 c. light brown sugar
  • 1 tsp. baking soda
  • 1/8 tsp. salt
  • 1 large egg, beaten
  • 2 Tbsp. margarine, melted
  • 1/4 c. golden raisins, softened in water and drained well
  • 1/4 c. walnuts

Directions

    Peel skin off peaches and cut into small chunks.

    In a medium size bowl and using a potato masher, mash the peaches; pour into a strainer and drain.

    In large bowl, mix together flour, sugar, baking soda and salt.

    Set aside.

    In medium size bowl blend together peaches, beaten egg and melted margarine.

    Stir in the nuts and raisins.

    Add to the flour mixture and blend well.

    Pour into a 5 x 9-inch greased and floured loaf pan and let stand for 20 minutes.

    Bake in 350° oven for 55 minutes.

    Cool bread in pan for 15 minutes.
