Peach Bread Pudding

  • 2 eggs
  • 1 c. milk
  • 1/2 tsp. vanilla
  • 5 slices white bread, quartered diagonally
  • whipped cream (optional)
  • 1 (8 3/4 oz.) can peaches or fruit cocktail, sliced and drained
  • 1/3 c. sugar
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ginger or nutmeg

Directions

    Preheat oven to 350°.

    Combine eggs, milk and vanilla; add bread and drained peaches.

    In small bowl, combine sugar, cinnamon and nutmeg.

    Reserve 1 1/2 teaspoons of sugar mixture; set aside. Add remaining sugar mixture to peach mixture; mix well.
