Peach Butter

Ingredients
- 5 lb. peaches (about 14)
- 1 c. water
- 3 1/2 c. sugar
- 2 Tbsp. orange liqueur or peach brandy (optional)
- 1 Tbsp. candied ginger (optional)
Directions

1Simmer the peaches in the water until the skin is easy to remove.

2Peel and pit the peaches, saving the cooking liquid. Puree the peaches (you will have about 8 cups) and place with the liquid (about 1/2 cup) and the sugar in a pot and cook over low heat, stirring occasionally until thick, about 3 hours.

3Taste and add optional liqueur or brandy and cook a few minutes more.

4Add the ginger, if desired.

5Remove from the heat and cool.

6Place in a container in the refrigerator and keep refrigerated or freeze until ready to

7use.

8Makes 4 pints.
