Peach Cobbler

  • 6 c. fresh peaches
  • 1 1/2 c. sugar
  • 1/4 c. water
  • 3 Tbsp. flour
  • 1/4 c. sugar
  • Pinch salt, cinnamon, nutmeg and allspice
  • 1 c. flour
  • 1/2 c. sugar
  • 2 tsp. baking powder
  • 3/4 c. milk
  • 1/2 tsp. salt

Directions

    Combine peaches, 1 1/2 c. sugar and water. Bring to a boil; simmer to allow fruit to soften. Blend 3 Tbsp. flour, 1/4 c. sugar and spices. Pour into peach mixture. Stir until thickened. Remove from heat. Pour into 12 inch skillet or cobbler pan. Cool slightly.

    Combine remaining flour, sugar, baking powder and milk, blend well. Season with salt. Pour in an irregular shape over center of cobbler. Bake 45 minutes until golden brown at 400°.
