  • 1/2 cup butter, unsalted melted and divided
  • 2 cups whole wheat flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 2 cups peaches up to 3 cups, ripe
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 large eggs beaten
  • 2 tablespoons brown sugar
  • 1 x cinnamon for sprinkling optional

    Pour 1/4 cup melted butter into a square or round glass baking dish, spreading to completely coat the dish.

    Place sliced peaches in baking dish and stir to completely coat with butter.

    Pour butter-coated peaches into a medium bowl and set aside.

    The baking dish should have a nice buttered coating.

    Place flour, soda, sugar, cinnamon and salt in a large mixing bowl and combine thoroughly.

    Make a well in the center of the mixture.

    In small mixing bowl, mix buttermilk, vanilla, egg and remaining 1/4 cup butter until thoroughly blended.

    Pour into the well of the flour mixture and stir lightly until just blended.

    Do not over mix.

    Spread 1/2 of the batter into the baking dish.

    Spread peaches onto the batter.

    Spread remaining 1/2 of the batter over the peaches.

    Sprinkle with 2 tablespoon brown sugar and a sprinkle of cinnamon, if desired.

    Bake uncovered in 350F (180C) oven for 50 minutes.
