  • 6 medium peaches (4 c.)
  • 1 c. brown sugar
  • 2 tsp. lemon juice
  • 2 Tbsp. flour
  • 1/2 tsp. cinnamon
  • 1 (18 oz.) pkg. oatmeal cookie mix
  • 1/2 c. shredded coconut
  • 1/2 c. butter or margarine
  • 2 Tbsp. butter or margarine
  • 2 c. rolled oats
  • 1 1/4 c. flour
  • 3/4 c. brown sugar or to taste
  • 1 stick butter
  • 1 tsp. cinnamon

Directions

    Combine peaches, brown sugar, lemon juice, flour and cinnamon in bowl.

    Combine cookie mix and coconut in mixing bowl.

    Cut in 1/2 cup butter with pastry blender.

    Press 1/2 of topping mixture into bottom of 2-quart dish.

    Spread peach mixture over crust.

    Dot with 2 tablespoons butter.

    Sprinkle remaining topping mixture over filling.

    Bake in 375° oven for 40 to 45 minutes.
