  • 3 lb. peaches (9 medium-large)
  • 1 1/2 Tbsp. lemon juice
  • 1 tsp. vanilla extract
  • 1 c. sifted flour
  • 3 oz. melted unsalted butter
  • 3/4 c. sugar
  • 1/4 tsp. salt
  • 1/4 tsp. almond extract
  • 1 egg, beaten

Directions

    Adjust oven rack to be 1/3 down from top of oven and preheat to 400°.

    Butter an 11 x 8 x 2-inch baking dish and set aside. Blanch and peel peaches.

    Cut in half and remove pits, then cut halves into wide slices.

    You should have 6 cups of sliced peaches.

    Place in wide bowl.

    Combine lemon juice and vanilla and drizzle over peaches; toss gently.

    Place peaches in baking dish.
