- 1 whole Pie Crust Or Pastry Dough
- 2 whole Peaches
- 1/4 cups Date Sugar
- 1/2 whole Lemon, Juiced
- 1 teaspoon Cinnamon
- 1 teaspoon Vanilla Extract
- Lemon Zest
Directions

1Preheat oven to 350°F. Spray a round pie dish and place the pastry dough in the center with the edges folded over the side.

2Wash and slice the peaches thinly. Place the peach slices in a medium size bowl. Add the remaining ingredients and mix so the peach slices are entirely and evenly covered. Sprinkle with lemon zest.

3Arrange the peach slices in a circular motion starting with the outside layer. Then fold the dough over the peach slices.

4Bake for 35-40 minutes. Serve hot with vanilla ice cream. Refrigerate remaining galette.
