  • 1 (No. 2 1/2 can) peaches, drained (about 3 1/2 c.)
  • 1 1/4 c. sugar
  • 2 Tbsp. flour
  • 2 Tbsp. oleo
  • pinch of salt
  • 3 eggs, well beaten
  • 1 tsp. vanilla
  • deep dish pie shell

    Preheat oven to 425°.

    Place peach slices in bottom of pie shell.

    Cream together sugar, flour, oleo and salt.

    Add beaten eggs and vanilla to creamed mixture and mix well.

    Bake in 425° oven for 10 minutes, then reduce temperature to 350° and bake for 50 minutes. When knife is inserted in middle, it should come out clean.
