- 1 large egg
- 1 cup milk
- 4 tablespoons butter, melted
- 23 cup sugar
- 12 teaspoon salt
- 14 teaspoon cinnamon
- 1 teaspoon fresh lemon juice
- 14 teaspoon vanilla
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 peaches, pitted and chopped but not peeled (about 1 1/2 cups)
Directions

1Preheat oven to 350F

2Beat egg in a large mixing bowl.

3Stir in milk, butter, sugar, salt, cinnamon, lemon juice and vanilla.

4Sift flour and baking powder together.

5Stir flour mixture into egg mixture, mixing only until just blended.

6Gently fold in the peaches.

7Spoon into greased muffin cups, filling each only 3/4 full.

8Bake 20 minutes.
