- 1/2 c. shredded Mozzarella cheese
- 2 Tbsp. Parmesan cheese
- 1 1/2 tsp. parsley flakes
- 4 oz. lean ground beef or ground turkey
- 1/2 c. chopped onion
- 1/2 c. finely chopped carrot
- 2 cloves garlic, minced
- 1 (8 oz.) can low sodium tomato paste
- 1/2 c. water
- 1 tsp. basil, crushed
- 1/2 tsp. oregano
- 1/2 tsp. fennel seed
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 4 lasagna noodles
- 1 slightly beaten egg white
- 1 c. low-fat cottage cheese or Ricotta cheese
Directions

1Sauce:

2In a medium saucepan, cook meat, onion, carrot and garlic until meat is brown.

3Drain.

4Stir in tomato sauce, paste, water, basil, oregano, fennel, salt and pepper.

5Bring to a boil. Reduce heat.

6Cover and simmer 10 minutes.

7Meanwhile cook noodles according to directions and drain.
