  • 1/2 c. shredded Mozzarella cheese
  • 2 Tbsp. Parmesan cheese
  • 1 1/2 tsp. parsley flakes
  • 4 oz. lean ground beef or ground turkey
  • 1/2 c. chopped onion
  • 1/2 c. finely chopped carrot
  • 2 cloves garlic, minced
  • 1 (8 oz.) can low sodium tomato paste
  • 1/2 c. water
  • 1 tsp. basil, crushed
  • 1/2 tsp. oregano
  • 1/2 tsp. fennel seed
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 4 lasagna noodles
  • 1 slightly beaten egg white
  • 1 c. low-fat cottage cheese or Ricotta cheese

    Sauce:

    In a medium saucepan, cook meat, onion, carrot and garlic until meat is brown.

    Drain.

    Stir in tomato sauce, paste, water, basil, oregano, fennel, salt and pepper.

    Bring to a boil. Reduce heat.

    Cover and simmer 10 minutes.

    Meanwhile cook noodles according to directions and drain.
