  • 7 pounds cling peaches
  • 1 qt vinegar
  • 8 cups sugar
  • 1 tsp allspice
  • 1/2 tsp whole cloves
  • 1 large stick cinnamon (broken into bits)

Directions

    Dip peaches into boiling water for 30 seconds to loosen skins.

    Cool in cold water; drain.

    Place in 4 qt bowl containing 1 1/2 T salt and 2 qts water to prevent darkening.

    Drain just before using.
