- 1 qt vinegar
- 8 cups sugar
- 1 tsp allspice
- 1/2 tsp whole cloves
- 1 large stick cinnamon (broken into bits)
Directions

1Dip peaches into boiling water for 30 seconds to loosen skins.

2Cool in cold water; drain.

3Place in 4 qt bowl containing 1 1/2 T salt and 2 qts water to prevent darkening.
