  • 3 large peaches
  • whipped cream (Cool Whip)
  • 1 to 3 Tbsp. powdered sugar
  • 1/2 tsp. vanilla
  • lemon juice
  • 3 Tbsp. cornstarch
  • 4 Tbsp. peach gelatin (Jell-O)
  • 1 c. water
  • 1 c. sugar + 1/4 c. sugar
  • 1 baked pie crust (9-inch)

Directions

    Combine cornstarch, gelatin, 1 cup sugar and water in a saucepan.

    Bring to rolling boil.

    Cool.

    Cut up peaches; add a few drops of lemon juice and 1/4 cup sugar.

    Mix with gelatin. Pour into baked pie crust.

    Cover with whipped cream.
