- 2 Tbsp. flour or tapioca
- 1/2 tsp. cinnamon
- 2/3 c. sugar
- 1 Tbsp. butter
- 1/4 tsp. salt
- 1/4 tsp. lemon extract
Directions

1Stir dry ingredients; mix with peaches.

2Pour into pastry lined tin.

3Cover with top crust with slits for steam to escape. Press edges together, flute and trim.

4Bake in quick oven about 10 minutes.

5Reduce heat to 350°.

6Bake for 25 minutes longer.
