- 2 lb. fresh peaches
- 3/4 c. sugar
- 3/4 c. water
- 3 Tbsp. cornstarch, diluted with 1/4 c. water
- pinch of salt
- 3 Tbsp. bread crumbs
Directions

1Dip peaches in boiling water and remove skins.

2Brush peaches with lemon juice.

3Slice about 1/2-inch thick.

4Prepare glaze with sugar, water and cornstarch mixture.

5Mix well and cook until thick and clear, stirring constantly.

6Add salt.

7Pour hot glaze over sliced peaches and mix gently.

8Pour into pie crust that has been first sprinkled with dry bread crumbs.

9Cover with top crust that has been pricked with a fork or any design desired.

10Bake 40 to 45 minutes in a 400° oven.
