  • 1/2 stick margarine
  • 1/2 c. sugar
  • 2 Tbsp. self-rising flour
  • 1 c. milk
  • 3 egg yolks
  • 1/2 tsp. vanilla
  • 1 c. fresh peaches
  • 2 Tbsp. sugar

Directions

    Mix first 6 ingredients.

    Cook peaches in 2 tablespoons sugar a few minutes; then add to first mixture.

    Pour in 9-inch pie crust and bake about 45 minutes (until firm) at 350°.

    Beat egg whites with 3 teaspoons sugar until stiff and return to oven until meringue browns.
